The Palmerston hosts collaboration series with Edinburgh restaurants
Throughout June, the bakery at The Palmerston will be collaborating with four local Edinburgh restaurants to create a series of unique, limited-edition pastries, available exclusively on the bakery counter on weekends throughout the month

The series kicks off on the 6th & 7th of June with Sabzi, a family-run Punjabi restaurant based in Leith. Together, The Palmerston and Sabzi have created a Lassi de Nata using Sabzi’s signature lassi recipe.

On the 13th & 14th of June, The Palmerston will partner with Mirin. Known for its Asian-inspired menu, Mirin has collaborated with the bakery to create a Cherry & Sesame Kouign-Amann.

The third collaboration takes place on the 20th & 21st of June, where The Palmerston teams up with Edinburgh hot sauce company Chorrito to create a Coffee, Habanero & Orange Pain Suisse – taking inspiration from Chorrito’s much-loved habanero, orange, and coffee hot sauce.

Closing the series on the 27th & 28th of June, The Palmerston will collaborate with Sotto, an Italian enoteca and trattoria in the heart of Stockbridge, with a classic Italian Coda d’Aragosta pastry.

Each pastry will be in limited supply, and on the counter while stocks last. The Palmerston is open for coffee and pastries to sit-in from 9am-11am, with takeaway only from 11am.
